Method of Preparation

Follow these step-by-step instructions carefully.

  1. 1
    Step 1

To Prepare the Lamb Bredie: Heat 3 tablespoons of olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Brown the lamb cubes in batches until nicely seared on all sides. Remove the lamb and set aside.

  2. 2
    Step 2

Reduce heat to medium, add chopped onions to the pot, and sauté until softened and translucent, about 8-10 minutes.

  3. 3
    Step 3

Add minced garlic, grated ginger, and chopped chilli (if using). Cook for 2 minutes until fragrant.

  4. 4
    Step 4

Stir in ground coriander, cumin, turmeric, crushed allspice, bay leaves, whole cloves, and cinnamon stick. Cook for 1 minute, stirring constantly, until aromatic.

  5. 5
    Step 5

Return the browned lamb to the pot. Season with 1.5 teaspoons of salt and 0.5 teaspoon of black pepper.

  6. 6
    Step 6

Add the quartered potatoes, cleaned waterblommetjies, lamb stock, and white wine vinegar. Bring to a gentle simmer.

  7. 7
    Step 7

Cover the pot and reduce heat to low. Simmer for at least 2.5 to 3 hours, or until the lamb is fork-tender and the waterblommetjies are soft. Stir occasionally to prevent sticking.

  8. 8
    Step 8

Towards the end of cooking, stir in the fresh lemon juice. Taste and adjust seasoning if necessary. Remove bay leaves, cinnamon stick, and whole cloves before serving.

  9. 9
    Step 9

To Prepare the Saffron-Kissed Samp: Rinse the samp thoroughly under cold water. Place in a bowl, cover with 1.5 litres of cold water, and soak overnight (or for at least 8 hours).

  10. 10
    Step 10

Drain the soaked samp and rinse again. Transfer the samp to a medium saucepan. Add 750ml fresh water and 250ml milk. Bring to a boil, then reduce heat to low, cover, and simmer for 45-60 minutes, or until the samp is tender but still has a slight chew. Stir occasionally to prevent sticking and add a little more hot water if it becomes too dry.

  11. 11
    Step 11

Once cooked, stir in the 2 tablespoons of butter, saffron steeped in milk/water, and 0.5 teaspoon of salt. Keep warm.

  12. 12
    Step 12

To Prepare the Toasted Fynbos Gremolata: In a small bowl, combine the 0.5 cup finely chopped parsley, 1 tablespoon finely chopped rosemary, 1 tablespoon finely chopped thyme, lemon zest, roughly chopped toasted macadamia nuts, 1 clove minced garlic, 1 tablespoon olive oil, and a pinch of sea salt. Mix well.

  13. 13
    Step 13

To Serve: Ladle the rich Karoo Lamb & Waterblommetjie Bredie into warm serving bowls. Serve alongside a generous portion of the Saffron-Kissed Samp. Garnish each serving with a sprinkle of fresh chopped parsley and a spoonful of the Toasted Fynbos Gremolata.
