Do not overcrowd the pot. Remove seared springbok and set aside.

**Deglaze the Pot:** Pour in the remaining 1 cup of Cabernet Sauvignon and the reserved marinade liquid. Bring to a vigorous simmer, scraping the bottom of the pot with a wooden spoon to release any browned bits (fond). Reduce the liquid by half, about 5-7 minutes.

**Braise the Potjie:** Return the seared springbok to the pot. Add the strong beef or venison stock and the smoked paprika. Submerge the rooibos tea bags in the liquid. Bring the potjie to a gentle simmer, then reduce the heat to low, cover tightly, and braise for 3 to 3.5 hours, or until the springbok is exquisitely fork-tender. Stir occasionally to prevent sticking. Remove the rooibos tea bags before serving.
