Drain the cooked chickpeas, reserving approximately 100ml of their cooking liquid. In a high-speed food processor, combine the tender chickpeas, 2 peeled garlic cloves, 50ml of extra virgin olive oil, the fresh juice of half a lemon, and half of the finely chopped fresh coriander. Blend until the mixture is incredibly smooth and velvety, adding reserved chickpea cooking liquid as needed to achieve your desired consistency. Season generously with sea salt and freshly ground black pepper to taste. Keep the purée warm.

Pour 200ml of extra virgin olive oil over the cod, adding the remaining 2 peeled garlic cloves and the 2 fresh bay leaves, ensuring the fish is mostly submerged. Bake for 20-30 minutes, or until the bacalhau is beautifully flaky but still moist and tender. Ensure the oil does not boil vigorously.
