Method of Preparation
Follow these step-by-step instructions carefully.
- 1Step 1
Prepare the Causa Base: Peel and cut the yellow potatoes into uniform pieces. Boil them in salted water until very tender, about 15-20 minutes. Drain thoroughly and immediately pass them through a potato ricer or mash them until perfectly smooth. While still warm, add the aji amarillo paste, lime juice, vegetable oil, salt, and white pepper. Mix vigorously until well combined and smooth. Taste and adjust seasoning. Cover and let cool completely in the refrigerator (at least 30 minutes) to firm up.
- 2Step 2
Prepare the King Crab Filling: In a medium bowl, gently combine the shredded king crab meat, mayonnaise, finely minced red onion, chopped cilantro, and lime juice. Season with salt and white pepper to taste. Mix just until combined, being careful not to break up the crab too much.
- 3Step 3
Prepare the Smoked Rocoto Emulsion: Carefully deseed and devein the rocoto peppers. Blanch them in boiling water for 3 minutes, then drain and refresh in ice water. Repeat this process two more times to reduce their heat. Blend the blanched rocoto peppers with olive oil, lime juice, smoked paprika, and a pinch of salt until a smooth, vibrant emulsion forms. Taste and adjust seasoning.
- 4Step 4
Prepare the Avocado Pearls: Halve the avocados and carefully scoop out the flesh. Using a small melon baller or a very small spoon, scoop out delicate avocado "pearls." Alternatively, finely dice the avocado. Gently toss the avocado with a tiny squeeze of lime juice and a pinch of salt to prevent browning and enhance flavor.
- 5Step 5
Assemble the Causa: Lightly oil a 10 cm (4-inch) diameter ring mold for individual servings, or a loaf pan for a larger terrine. For individual servings, place a ring mold on a serving plate. Divide the cooled potato mixture into three equal portions. Press one portion evenly into the bottom of the mold.
- 6Step 6
Layer the Causa: Spread half of the king crab filling over the first potato layer. Carefully add a second layer of potato mixture, pressing it down gently but firmly. Spread the remaining king crab filling over this potato layer. Finish with the last layer of potato mixture, smoothing the top.
- 7Step 7
Chill and Unmold: Gently press down the top layer to ensure a compact terrine. Carefully lift the ring mold to unmold the causa. Repeat for all individual servings. For a loaf pan, chill for at least 1 hour, then slice into portions.
- 8Step 8
Garnish and Serve: Drizzle the Smoked Rocoto Emulsion artistically around the base of each causa. Arrange the avocado pearls around the causa. Garnish each serving with a halved hard-boiled quail egg, a halved Botija olive, a small sprig of fresh cilantro, and a delicate edible flower. Serve immediately.
