Method of Preparation

Prepare the Ribs: Rinse the beef short ribs under cold water. Soak them in cold water for at least 2 hours, changing the water every 30 minutes, to remove excess blood.

Blanch the Ribs: Drain the soaked ribs. Place them in a large pot, cover with fresh cold water, and bring to a boil. Boil for 5-7 minutes, skimming off any foam. Drain the ribs and rinse each piece thoroughly under cold water to remove any impurities.

Prepare the Braising Liquid: In a large pot or Dutch oven, combine the soy sauce, 4 cups of water, mirin, rice wine, honey, brown sugar, minced garlic, grated ginger, and black pepper. Stir well until sugars dissolve.
