Emerald Shore Karei no Sakamushi: Delicate Steamed Flounder with Yuzu-Kissed Ponzu Ankake and Seasonal Botanicals
This exquisite dish celebrates the delicate elegance of Japanese cuisine, showcasing flounder (karei) steamed to ethereal perfection. The gentle steaming process, infused with sake, preserves the fish's natural sweetness and tender, flaky texture. It is then adorned with a vibrant "Yuzu-Kissed Ponzu Ankake"—a shimmering, thickened sauce that balances the umami depth of dashi with the bright, aromatic zest and tartness of fresh yuzu. Seasonal botanicals like crisp snap peas and decorative carrots add a touch of visual artistry and refreshing crunch, creating a symphony of subtle flavors and textures that tantalize the palate and evoke the serene beauty of Japan's emerald shores.

- Carrot1 small, thinly sliced and cut into flower shapes (ume-ninjin)
- Fresh ginger1 inch piece, julienned
- Yuzu zest0.25 teaspoon, finely grated
- Chives1 tablespoon, finely chopped
Method of Preparation
Follow these step-by-step instructions carefully.
- 1Step 1
Prepare the Dashi: Wipe the kombu with a damp cloth. Place kombu and 600ml water in a pot. Heat gently over medium-low heat, just until small bubbles form around the kombu (do not boil). Remove kombu just before boiling. Bring water to a boil, then remove from heat and add katsuobushi. Let steep for 30 seconds, then strain through a fine-mesh sieve, pressing lightly on the katsuobushi. You should have about 500ml of dashi. Set 200ml aside for the ankake.
- 2Step 2
Prepare the Flounder: Pat the flounder fillets dry with paper towels. Lightly score the skin side of each fillet with a few diagonal cuts. Sprinkle both sides with salt.
- 3Step 3
Prepare Vegetables: Score the tops of the shiitake mushrooms for a decorative effect. Remove strings from snap peas. Cut thin slices of carrot and use a small flower-shaped cutter (or carefully carve) to create ume-ninjin.
- 4Step 4
Steam the Flounder and Vegetables: Arrange the flounder fillets, shiitake mushrooms, snap peas, and carrot flowers on a heatproof plate that fits into your steamer. Sprinkle the flounder with sake. Steam over high heat for 8-10 minutes, or until the fish is opaque and flakes easily.
- 5Step 5
Make the Yuzu Ponzu Ankake: While the fish is steaming, combine 200ml dashi, usukuchi soy sauce, mirin, and fresh yuzu juice in a small saucepan. Bring to a gentle simmer over medium heat. In a separate small bowl, whisk together katakuriko (or cornstarch) and 2 tablespoons of water to create a slurry. Slowly pour the slurry into the simmering sauce, whisking constantly, until the sauce thickens to a glossy, translucent consistency. Remove from heat.
- 6Step 6
Assemble and Serve: Carefully transfer the steamed flounder and vegetables to individual serving plates. Ladle a generous amount of the warm Yuzu Ponzu Ankake over the fish and vegetables. Garnish with julienned fresh ginger, finely grated yuzu zest, and chopped chives. Serve immediately.
