Add the whole green cardamom, mace, cinnamon stick, cloves, and black peppercorns. Rub the spices into the lamb thoroughly. Cover and refrigerate for at least 30 minutes, or preferably 2-4 hours.

Prepare Aromatic Pastes: While the lamb marinates, blanch the pistachios and cashews by soaking them in hot water for 15 minutes, then drain. Steep saffron threads in warm milk.
