Method of Preparation

Pat the lamb cubes dry and marinate them with the yogurt and 1 teaspoon of salt. Cover and refrigerate for at least 30 minutes, or preferably 2-4 hours.

Heat 2 tablespoons of ghee in a large heavy-bottomed pot or Dutch oven over medium heat. Add the thinly sliced onions and fry, stirring frequently, until they are deep golden brown and caramelized. Remove the fried onions with a slotted spoon and spread them on a paper towel to cool and crisp. Once cool, crush them lightly to form a coarse paste.

Drain the soaked cashews and almonds. Blend them with 1/4 cup of fresh water to form a very smooth, fine paste. Set aside.
