In a heavy-bottomed pot or Dutch oven, heat 2 tablespoons of ghee over medium-high heat. Sear the lamb shanks on all sides until deeply browned. Remove and set aside.

In the same pot, add the remaining 2 tablespoons of ghee. Add the sliced onions and sauté until golden brown and caramelized, about 10-15 minutes. Add the pearl onions and cook for another 5 minutes until lightly browned.
