Prepare the Fish: Ensure the red snapper is scaled and gutted. Pat it thoroughly dry with paper towels. Make two to three diagonal scores on both sides of the fish (about 1cm deep) to ensure even cooking and better flavor absorption. Place a few slices of ginger and sections of scallions inside the fish cavity and on top.

Prepare Aromatics and Soaks: Rinse the dried lily bulbs and dried goji berries under cold water. Soak them in separate bowls of warm water for 15 minutes until softened. Drain well. Slice 50g of ginger and cut 4 stalks of scallions into 5cm sections. Julienne the remaining ginger and scallions for the final garnish.

Steam the Fish: Place the fish on a heatproof plate that fits inside your steamer. Drizzle 1 tablespoon of Shaoxing wine over the fish. Arrange the soaked lily bulbs and goji berries around and on top of the fish, along with the ginger slices and scallion sections. Bring water in your steamer to a rolling boil. Carefully place the plate with the fish into the steamer. Cover tightly and steam for 10-15 minutes, depending on the thickness of the fish (a 1kg fish typically takes 12-15 minutes). The fish is cooked when the flesh is opaque and flakes easily with a fork.

Prepare the Aromatic Broth: While the fish is steaming, combine the superior chicken broth, premium light soy sauce, remaining 1 tablespoon of Shaoxing wine, white pepper, and rock sugar in a small saucepan. Bring to a gentle simmer over medium heat, stirring until the rock sugar dissolves. Keep warm.

Final Assembly: Carefully remove the steamed fish plate from the steamer. Discard the ginger slices and scallion sections from the steaming process, and any accumulated liquid on the plate (this liquid can be bitter).
