Method of Preparation

Blanch Meats: In a large pot, bring enough water to a rolling boil. Add the chicken pieces and pork chunks. Blanch for 5 minutes, skimming off any scum that rises to the surface. Drain the meats and rinse them thoroughly under cold running water to remove all impurities and ensure a clear broth.

Prepare Ingredients: Place the blanched chicken and pork into a large heatproof ceramic pot or a deep, sturdy glass bowl that fits inside your double-boiler setup. Add the rehydrated dried scallops (along with their soaking water, strained through a fine-mesh sieve), rehydrated lily bulbs, goji berries, and ginger slices.

Assemble Double-Boiler: Pour the 1.5 liters of distilled water and Shaoxing wine into the pot with the ingredients. The water level should cover the ingredients. Ensure the pot or bowl is covered tightly with its own lid or heavy-duty foil. Place this covered pot into a larger pot (the outer pot of the double-boiler).

Double-Boil: Fill the outer pot with enough hot water to reach about two-thirds up the sides of the inner pot. Bring the water in the outer pot to a gentle simmer over medium-high heat, then reduce the heat to low, ensuring a very gentle simmer. Double-boil for a minimum of 4 hours. Replenish the water in the outer pot as needed to prevent it from boiling dry.

Add Matsutake: During the last 30 minutes of double-boiling, carefully remove the lid from the inner pot and add the thinly sliced fresh Matsutake mushrooms. Replace the lid and continue to double-boil. If using rehydrated Matsutake, you can add them at the beginning.

Season and Serve: After 4 hours, carefully remove the inner pot from the double-boiler. Skim off any residual fat from the surface of the consommé using a ladle or fat separator. Season the consommé with fine sea salt to taste. Ladle the clear, aromatic consommé into individual serving bowls. Garnish with finely julienned scallion greens just before serving.
